Gluten Free Chocolate Walnut Banana Bread

Ingredients:

  • 3 ripe bananas + 1 for decoration
  • ½ cup vegetable oil
  • ½ cup cane sugar
  • 1 tsp of vanilla
  • 2 tbsp chia seeds
  • 2 cups gluten free flour (or all purpose)
  • 1 cup oats
  • 2 tsp baking powder
  • Pinch of salt
  • 1 cup oat milk
  • 1 bag nib mor Original Organic Dark Chocolate snacking squares, chopped
  • 1 cup chopped walnuts

Directions:

  • Preheat oven at 350°F degrees
  • In a medium bowl mash well the bananas using a fork
  • Add oil, sugar, vanilla, and chia seeds to the bowl and stir to combine well
  • In another medium bowl whisk together flour, oats, baking powder, and salt
  • Add dry ingredients to wet ingredients and incorporate well
  • Slowly stir in milk to create a thick cake batter consistency
  • Fold in chopped chocolate and walnuts, saving some chocolate for decoration
  • Pour batter into a prepared loaf pan with parchment paper and oil
  • Decorate with a banana sliced in half and more chocolate
  • Bake for 45-50 minutes or until golden brown and a knife inserted in the center comes out clean
