Ingredients:
- 3 ripe bananas + 1 for decoration
- ½ cup vegetable oil
- ½ cup cane sugar
- 1 tsp of vanilla
- 2 tbsp chia seeds
- 2 cups gluten free flour (or all purpose)
- 1 cup oats
- 2 tsp baking powder
- Pinch of salt
- 1 cup oat milk
- 1 bag nib mor Original Organic Dark Chocolate snacking squares, chopped
- 1 cup chopped walnuts
Directions:
- Preheat oven at 350°F degrees
- In a medium bowl mash well the bananas using a fork
- Add oil, sugar, vanilla, and chia seeds to the bowl and stir to combine well
- In another medium bowl whisk together flour, oats, baking powder, and salt
- Add dry ingredients to wet ingredients and incorporate well
- Slowly stir in milk to create a thick cake batter consistency
- Fold in chopped chocolate and walnuts, saving some chocolate for decoration
- Pour batter into a prepared loaf pan with parchment paper and oil
- Decorate with a banana sliced in half and more chocolate
- Bake for 45-50 minutes or until golden brown and a knife inserted in the center comes out clean
